Savour signature Coorgi recipes at Vivanta Chennai, IT Expressway

From the picturesque Coorg comes a delightful cuisine that tells an interesting culinary tale of the Kodavas! Bringing these flavours to Buzz, the all-day diner at Vivanta Chennai, IT Expressway, is Chef Girish from Taj Madikeri Resort & Spa, Coorg, who has designed a spread that will delight food lovers.

For starters, try the non-vegetarian dishes like Koli chuttadh (chicken morsels marinated with spices and cooked in a charcoal oven); Sigdi meen fry (Chilli paste marinated prawns dusted with flour and fried) or the all-time favourite Pandi nallamallu barthad (Morsels of pork marinated in chili and spices and braised with rainforest black pepper); and vegetarians can try out Kari bale cutlet (Char oven roasted raw banana patties); Chakke cutlet (Raw jackfruit with local spices served fried); or Kummu nallamalllu barthad (Button mushroom  sauteed in black pepper).


The inviting mains include Pandi Kari, the classic Coorg style preparation of rich dark pork gravy finished with native broiled spice mix and kachampuli (local fruit vinegar); Yerchi barthad (Lamb cooked in pepper masala); and Pacha nallamallu sigdi meen curry (Fresh green peppercorn braised prawn gravy); while vegetarians can enjoy Baimbale curry (Kurba tribes recipe of  tender bamboo shoot); Toppu palaya  (local fresh spinach with garlic); and Kadmange kari (Sweet, sour and spicy wild mango curry).

Savour these with Kadambuttu (steamed rice flour dumpling); or Paputtu (steamed rice cake topped with fresh coconut). Or try their famous Pulao, Tarkari / Koli / Kori yerchi. Don’t miss the Kadagu more Kool (a south Coorg delicacy - a mishmash of rice, yoghurt, coconut & spices).

And the best is saved for the last! Delicious desserts on the menu include Carrot Payasa  (Cardamom infused carrot payasa); Khus khus payasam (Roasted & ground poppy seed payasa) and the much-loved Bella papauttu (Steamed rice pie with local palm sugar and coconut).
