Andhra flavours at Buzz!

Buzz, the all-day diner at Vivanta Chennai, IT Expressway invites guests to savour authentic Andhra fare, specially designed by Chef V Ravi, the master chef at Taj Deccan, Hyderabad. From working in the kitchen of his maternal uncle’s restaurant at the age of 15 to joining the Bhaskara Palace Hotel at the age of 19, Chef Ravi has picked up and honed the art of Andhra cooking over the 24 years he has been with the Taj Group of hotels.


At Buzz, Chef Ravi and the Vivanta Chennai team led by Executive Chef Jaffar Ali, has curated an extensive dinner buffet menu, with an array of delicacies infused with rich and aromatic spices that Andhra cuisine is famous for.

Guests can savour delicacies like Miripakaya Bhajji (famous snack of Andhra with chilli peppers fried with a gram flour batter);Royyalla Miryalu Fry (deep fried prawns with freshly ground black pepper); Peethala Vepudu(crab marinated with Andhra spices and deep fried); Mirapakaya Kodi (chicken cooked with green chilly and coconut); Royyala Iguru Andhra Style (simple fresh prawn curry preparation in sautéed onions and Indian spices); Bendakaya Phali Fry(Homely style bhindi fry); Beerakaya Kura Andhra Style (Ridge Gourd Curry); Kakarakaya Pulusu (Bittergourd curry prepared with tamarind and spices); Nellore Chepala Pulusu (tangy Andhra style Fish curry in tamarind sauce); Chamagadda Pulusu (Arbi is a traditional dish of Andhra Pradesh is cooked in a tamarind sauce, jaggery and spices); Dondakaya Vepudu (Ivy gourd, finely sliced deep fried and tempered with seasoning); and Kaima Unde Saaru (meat ball curry). Pair these with either Poori, Steamed Rice or the famous Kothmir Annam (fresh coriander-flavoured rice).

Wrap up your meal with delicious traditional desserts like Putharekulu (sugar paper sweets, popular in Atreyapuram, East Godavari); Bobbatlu (a classic stuffed flat bread); Ariselu (made of Jaggery, Ghee and Rice flour); Pappu Payasam (a traditional Andhra dessert prepared from yellow moong dal, jaggery and milk); and Chef’s special pumpkin halwa - Gummadikaya Halwa.
